2 ¼ C fat free half and half
½ C sugar
Pinch of salt
2 T cornstarch
3 T unsweetened cocoa powder
½ C egg beaters
5 oz bittersweet chocolate, chopped
2 T butter
1 t vanilla
Combine 2 C milk, pinch of salt, and ¼ C sugar in a saucepan and bring to a boil. Stir to dissolve sugar. Remove from heat. In a bowl, whisk the cornstarch, cocoa, and remaining sugar. Add ¼ C milk to that mix, stir until smooth, Add to it about a cup of the hot milk. Stir until smooth and then add the whole mixture into the saucepan. Bring to a boil, stirring constantly, cook until thickened. Add a small amount of hot pudding to the ½ C of egg beaters, stir well, add back into the saucepan. Cook over medium heat, bring to a boil, stir constantly for 2 minutes. Remove from heat, stir in butter and chocolate, and vanilla. Stir until smooth. Pour into serving bowls. Cover with saran and chill until serving.
