3 medium apples, cored and sliced
¼ C butter
1 C brown sugar
2 T corn syrup
1 t cinnamon
6-8 slices of 1 inch thick bread
3 eggs (or ¾ C egg beaters)
1 C skim milk
1 t vanilla
Saute apples in butter for 5 min. Stir in brown sugar, corn syrup, and cinnamon until brown sugar is dissolved. Pour apple mixture into greased pyrex baking dish (9x13). Top with bread slices. Beat together eggs, milk, and vanilla then pour over bread. Bake at 375 for 35-45 min. Cool 5 minutes and invert onto serving platter or serve from baking dish. You can also cover and refrigerate unbaked dish and bake in the morning for an easy breakfast.
