2 lb potatoes, chopped
2 C cauliflower florets
1 1/3 C shredded cheddar
½ C reduced fat sour cream
½ t salt
In a large saucepan, cover potatoes with water and bring to a boil. Cover and simmer until just barely tender. Add cauliflower and cook an additional 10 minutes or until both are tender. Drain, mash with the remaining ingredients.
