¼ C apple cider vinegar
2 T Dijon mustard
2 T honey
¾ t salt
¼ t pepper
¼ C canola oil
20 oz shredded cabbage and carrots
4 green onions, diced
2 celery ribs, diced
2 small Gala apples, chopped
Whisk together dressing ingredients, and pour over the salad mixture. Toss to coat. Serves 8-10. Some other options: substitute Bosc pears for the apples, or omit apples and substitute 1 C chopped almonds and ¾ C dried cranberries.
