1 C sorghum flour
1 C tapioca flour
½ C flax flour
½ C potato starch
1/3 C sugar
½ T baking powder (1 T at sea level)
2 ½ t xanthan gum
1 t salt
½ t baking soda
1 egg
2 C buttermilk
¼ C melted butter or oil
Stir together all dry ingredients. Whisk milk and egg together and mix in with dry. Stir until just combined. Pour into greased loaf pan, bake at 350 for 1 hour or until it passes the toothpick test. Cool for 5 min in pan, turn out, then let cool on rack before cutting.
