1 C chopped onion
1 t minced garlic
½ C chopped celery
½ C chopped carrots
½ C chopped red or green pepper
1 C chopped zucchini
2 T olive oil
1/3 C tomato paste
¼ C red wine
15 oz white beans, rinsed and drained
2 C veg or chicken broth
2 C water
1 T parsley
2 t basil
1 T lemon juice
1 t salt
¼ t pepper
Sauté the vegetables in the oil for 5 min. Stir in the tomato paste and the wine. Add the remaining ingredients, bring to a boil, cover and simmer until everything is tender.
