4 green onions, diced
1 T oil
½ C each: red, yellow, and green bell peppers
1 T fresh ginger, minced
¾ t minced fresh garlic
6 C water or vegetable broth
1 C fresh snap peas, chopped
2 T soy sauce
¼ t red pepper flakes
12 oz shrimp, peeled and chopped if more than bite sized
2 C fresh kale or spinach, chopped
Zest of one lemon
2 T lemon juice
1 t sesame oil (or more to taste)
1 t sesame seeds
Saute the onions and peppers for about 5 minutes. Add the ginger and garlic and cook another minute. Add the next four ingredients and bring to a boil. Reduce to a simmer. Add the remaining ingredients and simmer until heated through and ready to serve. Don’t cook too much longer or the peas will get bland and the shrimp will get tough.
