8 C chicken broth
1 t salt
1 t pepper
1 T dried minced onion
4 bay leaves
~1 ½ pounds of uncooked chicken
1 carrot, diced
4 C vegetables, diced (cauliflower, snap peas, broccoli)
1 t dried thyme
1 T dried parsley
Place the 1st 6 ingredients in the crockpot and cook on high for ~3 hours. Remove the chicken, add the rest of the ingredients, cook until tender. Shred the chicken and add to soup. Heat through and serve. Serves 6-8.
