1 head of cauliflower, cut into bite sized pieces
8 strips of skinny bacon, cooked and diced
6 T chopped green onion
½ C mayonnaise
½ C sour cream
2 C shredded cheddar
8 oz mushrooms, diced
Par boil the cauliflower until just tender. Drain, put in big bowl.
Save out half of bacon, green onions, and cheese. Mix everything else with the cauliflower, pour into baking dish. Sprinkle with the remaining bacon, onions, and cheese. Bake until bubbly and heated through.
