2 T bacon bits
2 C diced onion                      
Oil as needed
2 lbs chopped carrots
2 t minced garlic
½ t salt
1 large sweet potato, peeled and diced
½ t pepper
¼ t sage                                               
6 C chicken broth                    
½ C almond milk                                
Crispy bacon bits                                
Saute the bacon and the onions in oil until bacon is crisp and onions are tender.  Add the next 7 ingredients to the onions, bring to a boil, reduce to a simmer and cook until carrots are tender.  It took about 30 minutes for me.  Stir in the almond milk or milk of your choice and puree with an immersion blender until smooth.  Sprinkle with bacon bits before serving if desired.  This soup freezes well.
