Serves 8
1 large onion, diced
1 green pepper, diced
1 T olive oil
Saute until tender
5 C cooked rice
2 C white beans, rinsed
¼ C sliced black olives
2 C shredded cheddar
1 C fat free cottage cheese or ricotta
¼ C fat free sour cream
1 ½ t chili powder
1 C salsa
Combine all, pour into baking dish, bake at 350 for 45 min or until heated through.
