Serves 6
1 med red pepper, diced
1 small onion, diced
1 T olive oil
Saute until tender.
½ C chicken broth
½ C dried cranberries
¼ t salt
Add, bring to a boil, reduce and simmer 5 min.
1 ¼ C uncooked orzo, cooked and drained
Stir in, heat through
½ C chopped walnuts
¼ C parmesan
Stir in and heat through just before serving.
