Serves 8-10
1 yellow onion, minced
1 T olive oil
½ t minced garlic
Saute until tender.
4 oz green chilies, undrained
30 oz diced tomatoes
3 C chicken broth
1 t cumin add to onions, bring to a boil, turn down to simmer
1/8 t salt and pepper
~4 C diced chicken or turkey
Dish soup into bowls, sprinkle on Fritos, diced avocado, and shredded Jack cheese.
