¼ C olive oil
4 C chopped onion
2 C chopped red/yellow peppers
1 C chopped celery (optional)
Sauté until tender.
minced garlic to taste
1 T oregano
1 ½ t salt and onion powder
4 t cumin
1 t garlic powder and paprika
½ t chili powder
1/8 t white pepper, black pepper, cayenne, and dried red pepper flakes
3 T flour
Stir in herbs and flour and gradually add:
3 C chicken broth
Cook and stir until thickened.
Add:
1 C white rice
8 C additional chicken broth
¾ C diced green chilies
15 oz or more white beans, cooked, drained
1 lb cooked, diced chicken or turkey
Simmer for 20 minutes or until rice is tender. Serves 12
