Makes ~36
½ C canola oil
½ C butter
1 ½ C brown sugar 
Mix until smooth
 
2 eggs
Stir in
3 ¼ C flour  
½ t baking soda
½ t salt
Mix together and add gradually
1 ½ C rhubarb
Fold in.  Drop by spoonfuls onto lined baking sheet.  Bake  
at 350 for ~15 min.  Cool before frosting.
¾ C coconut (optional)
Frosting:
3 oz cream cheese, softened
1 T butter, softened
1 1/2 C powdered sugar
3 t vanilla
