3 T butter
2 C chopped onions
24 oz diced potatoes
4 C chicken broth
1 1/2 C diced ham
7 oz shredded cheddar cheese
3 T sour cream
Saute the onion in the butter until tender. Add the potatoes and broth, bring to a boil, reduce to a simmer, and cook until potatoes are tender. Stir in the ham, cheese, and sour cream. Heat through and serve.
