2 eggs
¾ C canola oil
2 t vanilla
Beat well in mixer
1 t lemon extract
1 t lemon peel
¾ C sugar
Beat in until thick
2 C flour
1 t baking powder
½ t salt
Combine and add gradually
½ C jam
Drop by rounded tablespoonfuls on baking sheet.
Place ½ t jam in the center of each cookie.
Bake at 400 for 10 minutes.
