3 medium tomatoes, diced
1 English cucumber, quartered and diced
1 large zucchini, cut in the same way
1 green pepper, diced
¼ C diced green onions
1/3 C sliced Kalamata olives
2 T minced fresh parsley
1 T diced fresh basil
1 C mozzarella, to be
stirred in just before serving
