4 C seeded, finely chopped watermelon
1 C finely chopped cucumber or zucchini
½ C diced red onion
½ C diced sweet red pepper
2 jalapeno peppers, seeded and diced
½ C minced fresh cilantro
2 T minced fresh basil
2 T minced fresh mint
4 T honey
2 t fresh lime juice
Gently toss all together to coat. Chill for a few hours before serving with chips.
