1 medium onion, diced
1 ½ T olive oil
4 C sliced fresh mushrooms
2 T soy sauce
4 T sherry
2 C dry pasta, cooked and drained
12 oz can tuna, drained well
3 T olive oil
¼ C flour
1 C skim milk
1 ½ C chicken broth
1 ½ C bread crumbs
1 C shredded cheese
Saute onion until tender. Add mushrooms and cook a bit. Add soy and sherry and cook until liquid is nearly gone. Mix that with the cooked pasta and tuna in a big bowl. In the onion pan, make a roux with the next 4 ingredients. Cook until thickened and mix well with the tuna and pasta. Pour into greased baking dish. Sprinkle with bread crumbs and cheese. Bake until heated through.
