¼ C sliced green onions
½ C green chilies or salsa
2-3 C frozen corn
3 oz cream cheese – lower fat
Stir all together in a skillet until melted and well mixed.
This is an easy way to prepare any kind of fish. I have a feeling it would make a great topping for a chicken breast, too, but I haven’t tried that yet.
