4 large zucchini
½ C fresh bread crumbs
½ C Parmesan
½ C shredded Cheddar
2 T chopped green chilies
1 medium tomato, diced
2 eggs
½ t salt
chopped zucchini
Cut zucchini in half lengthwise. Scoop out inners with a grapefruit spoon. Mix up filling and spoon into zucchini halves. Bake at 350 for 30 minutes. This recipe is brought to you from the Latigo Dude Ranch.
