3 1/3 C uncooked pasta
1 sweet red pepper, chopped
8 green onions, chopped
4 strips turkey bacon, diced
1 T olive oil
¼ C all purpose flour
1 t chili powder
1 t minced chipotle pepper in adobo sauce
½ t salt
½ t cumin
2 ¼ C skim milk
1 C shredded cheddar
2 T fresh cilantro, minced
Cook pasta and drain. In a skillet, sauté pepper, onions, and bacon in the oil. Stir in the flour and seasonings until well blended. Gradually add milk, bring to a gentle boil, and stir for 2 minutes or until thickened. Stir in half the cheese until melted. Combine sauce, cilantro, and pasta. Transfer to baking dish, sprinkle with remaining cheese, and bake for 30 min or until bubbly. Serves 8.
