2 C chopped onion
1 C sliced fresh mushrooms
3 T oil
½ t minced garlic
¼ C flour
4 C low fat milk
1 ½ C chicken broth
1 t pepper
¾ t salt
2 C cooked pasta, cut into small pieces if necessary
2 C shredded cheddar
4 C chopped, cooked chicken or turkey
3 C diced broccoli
Saute onions and mushrooms until tender. Add garlic and cook briefly. Stir in flour thoroughly. Gradually add the milk and broth and cook until thickened. If the broccoli isn’t cooked, add at this point. Otherwise, add it just before serving to prevent it from overcooking and losing its color. Add remaining ingredients, heat through and serve. Serves 8.
