1 large orange, peeled and de-seeded
1/3 C canola oil
1 egg
1 ½ C flour
½ C sugar
½ C chopped dates
1 t baking powder
1 t baking soda
½ t salt
Glaze: ½ C powdered sugar, ½ t orange zest, 1 T or more of orange juice
Place orange, oil, and egg in a blender or food processor and blend until smooth. Mix the dry ingredients together and stir into wet. Mix briefly, and spoon into 12 muffin cups that have been well sprayed. Bake at 400 for 15 min. When warm, dip into glaze if desired.
