1 onion, diced
1 green pepper, diced
3 celery ribs, diced
1 lb smoked turkey sausage
2 T olive oil
minced garlic to taste
1 lb cooked chicken or turkey, cubed
15 oz diced tomatoes
15 oz chicken or beef broth
6 oz tomato paste
1 T parsley
2 t basil
1 ½ t oregano
1 t salt
½ t cayenne
½ t Tabasco
Saute the first 5 ingredients until onions are tender. Transfer to crock pot, add remaining ingredients, and cook on medium heat for about 4 hours. Serve over rice.
