4-6 boneless, skinless chicken breasts
2 T minced fresh cilantro
2 ½ T fresh lime juice
1 ½ T olive oil
¼ t salt
cooking oil for sautéing
Salsa:
1 C chopped plum tomato
2 T finely chopped onion
2 t fresh lime juice
¼ t salt
1/8 t freshly ground black pepper
1 avocado, peeled and finely chopped
Place the chicken and next 3 ingredients in a bag and marinate for 5-10 min. Place chicken in a hot, oiled skillet, sprinkle with the salt, and sauté on both sides until cooked through. Discard marinade. Mix the ingredients for the salsa and serve with the chicken.
