1 C cooked brown rice
1 C fresh corn
1 C diced zucchini
1 C grated carrot
½ C diced tomatoes
1/3 C chopped red pepper
¼ C chopped green onions
2 T diced red onion
2 T chopped fresh cilantro
1 T fresh lime juice
1 T canola oil
1 T minced pickled jalapeno peppers
½ t salt, chili powder, black pepper
15 oz black beans, rinsed and drained
combine all, cover and chill until serving.
