1 C chopped onion
1 ½ C chopped carrots
1 C chopped celery
1 ½ lbs chopped chicken
2 T olive oil
64 oz chicken broth
1 C uncooked orzo pasta
2 ½ C water
3 fresh parsley sprigs
2 fresh thyme sprigs
½ t salt
¼ t pepper
8 C chopped fresh spinach
Saute the vegetables until crisp tender. If the chicken is uncooked, cook it along with the vegs. If already cooked, add at the end. Add everything but the spinach, bring to a boil, cook until pasta is done. ~ 10 min. Pull the parsley and thyme sprigs, add the spinach, heat through, serve. Serves 8.
