Strawberry Rhubarb Sauce > Latigo Ranch

Strawberry Rhubarb Sauce

May 23, 2010

2 C chopped fresh strawberries
1 C chopped rhubarb, frozen is fine
2/3 C sugar
1 T cornstarch
2 T water

Combine all in small saucepan.  Bring to a boil, reduce to a simmer, and cook until tender and thickened.  I like to puree it with a stick blender.
It’s great on waffles or stirred into cooked oatmeal.  Not too sweet.
