1 C butter
1/2 C sugar
1 egg
1 t vanilla
2 1/4 C flour
1/2 t baking powder
1/4 t salt
1/2 C raspberry jam
Cream the butter and sugar until fluffy. Stir in the egg and vanilla. Mix the dry ingredients well and stir into the batter. Divide the dough into four portions. Shape each into a 10 x 2 inch log and press down to make it ½ inch thick. Make a depression down the center of each log. Bake at 350 for 10 minutes. Fill the depressions with the jam and bake for 10-15 minutes longer or until lightly browned. Cool, cut into slices, sprinkle with powdered sugar before serving.
