1 T olive oil
1 stalk of celery, diced
1 onion, diced
1 head cauliflower, chopped
½ C uncooked rice
30 oz chicken broth or vegetable broth
2 C water
1 C skim milk
1 C fat free half and half
Sauté the onion and celery in oil until tender. Add the next 4 ingredients, bring to a boil, cover, simmer for 20 min. Puree with an immersion blender or transfer to a blender. Blend until smooth. Pour back into pot and add the milk. Heat through and serve with shredded cheddar on top if desired.
