4 boneless chicken breasts (either slice into thin pieces or pound until about ½ inch thick)
Sprinkle the pieces with salt and pepper and sauté in small amount of olive oil until no longer pink. Remove from skillet and keep warm.
1 t cornstarch
1 C apple cider or unsweetened apple juice
4 T maple syrup
1 t onion powder
Combine all until smooth, pour into skillet, cook until slightly thickened, add chicken and coat both sides, heat through and serve.
