1 C quinoa, rinsed
2 C water
½ C chopped onion 1 T olive oil
1 ½ C frozen peas
½ t salt
¼ t pepper
2 T chopped, toasted walnuts
Bring the quinoa and water to a boil, cover, reduce to a simmer and cook 15 minutes or until the water is absorbed. Remove from heat.
Saute the onions in the oil until tender. Turn off the heat, add the remaining ingredients to the skillet so that the peas warm up. When the quinoa is done, dump it into the skillet, stir well and serve.
