Beet bisque with lemon oil, pistachios, and fried spaghetti squash, house-made sourdough flatbread accompanied by shallot jam, Colorado chevre with smoked mushrooms, and house-made basil pesto

Smoked yak slider topped with foie gras, confited tomato, and house fermented malt vinegar, with triple cooked fries
