Crostini with Berkshire Lonza by Elevation Meats, lemon vinaigrette, and smoked pumpkin seeds
First course:
Coddled duck egg and Colorado peachwood smoked ham by River Bear Meats on a house-made, sourdough English muffin with a juniper hollandaise
Pairing: Lunetta- Prosecco; Veneto, Italy NV - $7
Second course:
Duck confit soup with house-made consommé, house-made sage fettuccini, and root vegetables.
Pairing: Goldeneye- Duckhorn Vineyards Pinot Noir; Anderson Valley, CA 2016- $22
Third course:
House-cured beef bacon steak made from Gold Creek Ranch beef brisket with a honey bourbon reduction
Or
Molasses, long pepper cured Tasmanian salmon with a blackberry gastrique
Both choices served with cauliflower puree and triple cooked potatoes

Palate cleanser:
House-made peppermint marshmallow, graham cracker, and smoked dark chocolate ganache

Hot toddy crème brulée
